Pumpkin, Sunflower & Nut Energy Balls ✨

• 1 cup pumpkin seeds
• 1 cup sunflower seeds
• ½ cup walnuts
• 2 tbsp chia seeds
• 2 tbsp ground flaxseed
• 1 cup soft dates
• ½ cup nut butter
• 2 tbsp tahini
• 2–3 tbsp desiccated coconut
• Pinch of sea salt

Method 👇

• Blend dates, nut butter & tahini until sticky
• Add seeds, walnuts, chia & flax
• Pulse until combined
• Roll into balls
• Coat edges in desiccated coconut
• Chill for 1 hour

Tahini – source of calcium

Dates – these add sweetness, it’s better to soak them before hand in water for a few minutes.
